See Kyat Kyauk-Swe (Burmese Fried Garlic Noodles)
We’re so excited to share this recipe from one of our fav foodies and bloggers on Instagram – Suu M. Khin, aka burmalicious_by_suu – who has created this version of Burmese Garlic noodles.
Fried garlic noodles are extremely popular in many Asian cuisines, but one aspect that sets Burmese garlic noodles apart is that the garlic is fried.
As Suu points out on her cooking blog, this isn’t just the normal procedure for frying garlic: “Typically, you fry the minced garlic in oil with a tad of turmeric powder to get a toasty, golden oil. But to achieve garlic noodles in restaurant quality or street vendor quality, to be precise, the recipe calls for elevated garlic oil. Just one additional step with an extra ingredient creates a significant difference.
The secret is to fry the garlic in chicken oil, which is rendered fat from bits of raw chicken skin and fat. Now this chicken-flavored, garlic-infused oil will grace the noodles with shine, fragrance and heavenly flavors.”

- 3 bone-in skin-on chicken thighs
- 4 minced garlic cloves
- 3 oz. dried noodles, 1/8″ wide
- 2 tsp. sugar
- 1 bunch of chopped green onions
- 1/4 inch ginger root
YIELD 3 servings
- Remove the skin and fat from the chicken thighs; set aside.
- Boil the chicken for 30 minutes in 3 cups of water with 2 of the garlic cloves, ginger root and a pinch of salt.
- When the chicken is done, debone the thighs and cut into small squares. Set aside the broth from the chicken.
- While the chicken is boiling, cut the skin and fat into smaller pieces and saute them slowly over low heat until the skins begin to brown.
- Add the rest of the minced garlic and continue frying on low heat until golden and fragrant. Separate the garlic flakes from the oil and put aside.
- Bring a pot of water to a boil, then add the noodles and cook for 2-3 minutes. Drain and rinse in cool water.
- Toss the noodles in half of the garlic oil (created from the chicken skin & fat), soy sauce, sugar and 3 tbsp of chicken broth, until they are well coated.
- Put the noodles in serving bowls, and then add garlic flakes, chicken and 1/2 of the green onions.
- Add the sugar and other 1/2 of green onions to the broth and serve on the side as a soup.
